Fresh food loses value fast. For small growers, one of the hardest challenges is moving fresh crops quickly at a fair price. That pressure forces mushroom growers to dry or grind their harvest just to avoid waste. The same applies to tomatoes. I grow black cherry tomatoes. When you grow for flavour, shelf life is short and quantities are small. A few kilos a week means nothing to a supermarket supply chain. But sold directly to someone nearby who actually wants them, that same harvest becomes valuable. Small crops that are worthless to large distributors can be genuinely valuable to the person who lives down the street.
